FES, is the cradle of Moroccan cuisine. If every city of Morocco can rightly pride itself on its gastronomy, Fes is the most renowned from the culinary point of view. Venus settled in number in the medina after the reconquest of Spain in the fifteenth century, the Andalusians brought with them their recipes. Today, one can taste savory dishes inherited from the Arabo-Andalusian tradition, dominated by the combination of sweet and savory.

The pigeon pastilla, a succulent mixture of meat and almonds coated in a crispy crispy cinnamon-flavored paste and sprinkled with icing sugar is one of the most well-known dishes. But you will discover many others on site, salad of carrots with orange, tomatoes confit “haloua” etc. At Riad Alya you have the opportunity to discover the flavors of a refined cuisine typically fassie, carefully concocted by the cook originating in Fez; A passion whose secrets are transmitted from mother to daughter.

The various tajines are prepared on the spot by our cooker with fresh local products. The Moroccan cuisine will make you discover the subtlety of the aromas, while enhancing the taste of fresh meats, fruits and vegetables of the market of the day.

You will have the choice to taste your dishes in the patio around the fountain, in the Moroccan lounge or on the terrace overlooking the Medina of Fez. Here are some of the dishes served at Riad Alya:

Breakfast
Included in all stays, breakfasts are plentiful with a choice of breads, jams, eggs, yogurt, fruit juices, pancakes, dates and local pastries.

Lunch and dinner menu
The gourmet menu consists of a mouthful with soup (harira, vegetables …), a selection of different entrees (fresh and / or cooked salads, pastilla …), a hearty and refined hot dish Tajine, couscous …), a homemade dessert, tea or coffee and a bottle of mineral water.
